Maltesers Cupcakes Recipe

My love of baking started years ago in my Nan’s kitchen, helping her with all kinds of everything from cakes to jam, you name it we made it.

When I finally got my own kitchen to make a mess in, I realised she’d thought me well without me even appreciating it at the time. Now I’m the one sharing recipes with her.

I love making all the old classics but also like adding my own twist on things and checking out new recipes to try.

With this being the first (of hopefully many) recipe blog posts,  I thought I’d keep the first recipe as simple and straight forward as I could. This is tried, tested and loved in my house so here it is – my Maltesers Cupcakes recipe.

Maltesers Cupcakes Recipes

Ingredients

For the cupcakes:

  • 200g softened butter
  • 150g caster sugar
  • 50g brown sugar
  • A couple of drops of vanilla extract
  • 4 medium size eggs (lightly beaten)
  • 200g plain flour
  • 10g baking powder
  • 80g Maltesers

For the buttercream:

  • 250g butter
  • 500g icing sugar sifted
  • A couple of drops of vanilla extract
  • 55g roughly crushed Maltesers
  • 4 medium size eggs (lightly beaten)
  • 200g plain flour
  • 10g baking powder
  • 80g Maltesers

Instructions

For the cupcakes:

  • Preheat the oven to 180°C and line a cupcake tin with cupcake cases.
  • Cream together the butter and both sugars until it is light and fluffy. Using an electric whisk is quicker and less painful on the arms.
  • Add all the vanilla and then the eggs a little at a time, whisking well after each addition. If the mixture looks like its gone a bit curdled add a couple of tbsp of the flour and beat well until the mixture looks smooth.
  • Using a metal spoon fold in the flour and baking powder (add them together) and then stir in the Maltesers.
  • Divide the mixture between your cupcake cases and bake in the oven for about 25 mins or until a toothpick inserted in to the middle of a cupcake comes out clean.
  • Once cooked remove from the oven and leave to cool in the tin.
  • 10g baking powder
  • 80g Maltesers

For the buttercream:

  • Using an electric handwhisk, whisk together the butter, icing sugar and vanilla until it becomes pale and fluffy.
  • You can either spoon the buttercream on top of each cupcake and spread it around with a knife. Or you could  pipe the buttercream on top of the cupcakes. Sprinkle on some crushed Maltesers to finish and VOILA,  very very tasty malteser cupcakes.
  • Add all the vanilla and then the eggs a little at a time, whisking well after each addition. If the mixture looks like its gone a bit curdled add a couple of tbsp of the flour and beat well until the mixture looks smooth.
  • Using a metal spoon fold in the flour and baking powder (add them together) and then stir in the Maltesers.
